Here’s one that really caught our attention–mostly because the recipe got posted. We thought we’d share it with you. The quality of the meat you start with will make a difference in the dish. Chefs know that if you start with flavorful, nutrient dense (minerals and fat = flavor) meat, the dish is exquisite. Start with bland, mushy meat, and it’ll be “good” or “good enough.” For example, one time we got bacon made by our butcher with the same recipe and process as ours, but with standard pigs. The experience reinforced why we’d raise our pigs for ourselves under any circumstance. The flavor of the trial bacon was flat and salty. There was no depth to it. It didn’t satisfy. The meat you start with makes a huge difference in the outcome.
